Bavarian apple pancake recipe details
- Ingredients
- 3 large eggs
- 1/8 teaspoon nutmeg
- 3 Tablespoons flour
- 6 Tablespoons milk
- 2 Tablespoons butter, melted
- 1/4 cup raisins
- 1/4 cup sliced almonds
- 2 large, tart cooking apples
- 2 Tablespoons butter
- 2 Tablespoons sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground cloves
Preheat oven to 450 degrees. In a mixing bowl, beat eggs and 1/8 teaspoon nutmeg with a whisk. Add flour in 3 additions and beat after each addition until mixture is smooth (do not overmix). Add milk in 2 additions, beating slightly after each. Lightly beat in 2 Tablespoons melted butter. Pour mixture into a well-buttered, 9-inch pie plate. Sprinkle top with raisins and almonds. Bake for 8 minutes in hot oven and then reduce heat to 350 degrees, baking 8 minutes more. While baking, peel, core, and thinly slice the apples. Melt remaining 2 Tablespoons butter in small skillet; add apples and sprinkle with sugar and spices. Cook slowly over low heat, turning occasionally until glazed and tender, about 10 minutes. After pancake is cooked, remove pie plate from oven; divide into halves. Top with slices apples. Serve hot.
