Barley and vegetable stew recipe details
Ingredients
150 g | pearl barley |
1 | onion, chopped |
3 | parsnips, diced |
1 small | pumpkin (hokkaido), diced |
4 | sausages (bangers), sliced |
4 sprig(s) | oregano, chopped |
1 clove(s) | garlic, chopped |
salt and freshly ground black pepper | |
1 l | vegetable stock |
3 tbsp | oil |
Instructions
Blanch the pearl barley in salted water, then strain through a sieve and rinse with cold water.In a saucepan, heat the oil. Sauté the onion, garlic and the vegetables for a few minutes. Add the barley and the stock and bring to a boil. Cook over low heat for 50 minutes. Add the sausages and the oregano and cook for another 5-10 minutes. Season to taste with salt and pepper.
Ladle into soup bowls and serve hot with crusty bread.
