Ingredients

150 g pearl barley
1  onion, chopped
3  parsnips, diced
1 small pumpkin (hokkaido), diced
4  sausages (bangers), sliced
4 sprig(s) oregano, chopped
1 clove(s) garlic, chopped
salt and freshly ground black pepper
1 l vegetable stock
3 tbsp oil

Instructions

Blanch the pearl barley in salted water, then strain through a sieve and rinse with cold water.

In a saucepan, heat the oil. Sauté the onion, garlic and the vegetables for a few minutes. Add the barley and the stock and bring to a boil. Cook over low heat for 50 minutes. Add the sausages and the oregano and cook for another 5-10 minutes. Season to taste with salt and pepper.

Ladle into soup bowls and serve hot with crusty bread.
