Barley and vegetable pilaf recipe details

Ingredients
Serves: 8- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 medium onion, finely diced
- 1 large carrot, finely diced
- 1 cup pearl barley
- 3 cups vegetable stock
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup sweet corn kernels
- 1 cup baby peas
- 2 tablespoons finely chopped mint
- 2 tablespoons finely chopped parsley
Preparation method
Prep: 15 mins | Cook: 1 hour 20 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium saucepan heat olive oil and butter over medium-high heat. Saute garlic, onions, and carrots until softened, approximately 5 minutes.
3. In a 2 quart ovenproof dish, combine sauteed vegetables, barley and stock.
4. Cover and bake in the preheated oven for 75 minutes. Stir in remaining ingredients and return to oven for 5 minutes.
