Ingredients
Serves: 4- 2 teaspoons olive oil
- 1 small onion, minced
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1 (14 1/2 ounce) can chopped tomatoes, with juices
- 1 pickled jalapeno, finely chopped
- 1/4 cup pitted green olives, chopped
- 1 1/2 teaspoons capers, rinsed and drained
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/8 teaspoon cinnamon
- 1/8 teaspoon salt
- 1/4 cup water
- 4 (8 ounce) salmon steaks
- 2 tablespoons lime juice
Preparation method
Prep: 30 mins | Cook: 18 mins1. Pour oil into a large skillet and set over medium heat. Add onion and garlic and cook for about 6 minutes to soften, then add remaining ingredients except salmon and lime juice.
2. When the liquids come to a boil, turn heat down to low and place a lid on the skillet. Cook for about 30 minutes, stirring every so often.
3. Preheat oven to 350 degrees F.
4. Set salmon fillets in a 13×9-inch baking dish. Drizzle with lime juice, then with 3/4 cup of the sauce.
5. Bake fish for about 18 minutes, until salmon flakes easily. Remove from oven and serve with remaining sauce.
