Berry syrup recipe details
Ingredients
250 g | raspberries, blackberries, blueberries, or sliced strawberries |
1 | lemon |
1 | orange |
30 g | sugar |
60 ml | water |
Instructions
With a vegetable peeler, remove one strip peel from lemon and orange and squeeze 1 tablespoon juice from each.In a large saucepan, combine lemon peel, orange peel, sugar, and water., Heat over medium heat and bring to the boil. Reduce heat to low and add berries. Simmer, uncovered, for 5 minutes. Remove saucepan from heat and leave to cool, about 30 minutes. When cooled, remove and discard lemon and orange peels.
Pour mixture into a blender and process until puréed. Pour puree into a sieve set over bowl and press with back of spoon to remove seeds. Discard seeds. Stir in lemon and orange juices.
Cover the bowl and refrigerate until cold.
Serve over ice cream or fresh fruit.
