Banana muffins with oat topping, recipe Rating: 4.6

Ingredients:
1/2 cup margarine
1 cup sugar
2 eggs
3 very ripe bananas
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1 teaspoon vanilla
1/2 cup finely chopped nuts
Topping:
1/3 cup flour
1/3 cup brown sugar
1/3 cup large flaked rolled oats
2 Tablespoons margarine
Instructions:

Beat in a mixer the margarine, sugar, eggs, and bananas until smooth. Sift together the flour, baking soda, baking powder, and salt. Add the flour mixture alternately with buttermilk to sugar/margarine mixture. Mix in the vanilla and nuts. Pour batter into greased muffin pans. Mix together ingredients for topping. Place 1 teaspoon on top of each muffin. Bake at 350 degrees for 20 minutes.
