Banana Meat Balls with Curry Sauce recipe

Ingredients
600 g | mince |
2 large | eggs, lightly whisked |
4 slice(s) | brown bread, soaked in a little water |
4 | bananas, each cut into 4 pieces |
200 | breadcumbs, dried |
salt and freshly ground pepper, to taste | |
fresh herbs, to taste | |
For the curry sauce: | |
1 medium | onion, finely chopped |
olive oil | |
1 tsp | curry powder |
250 ml | orange juice |
1 | orange rind, grated |
10 ml | apricot jam |
15 ml | cornflour, blended with a little water to create a paste |
salt and freshly ground pepper, to taste |
Instructions
Preheat the oven to 180 ºC and spray a large baking sheet with non-stick spray.
In a bowl mix together all ingredients except the bananas and breadcrumbs.
Divide the mixture into 16 portions and shape a round ball around each piece of banana. Coat each meatball with breadcrumbs, arrange on the baking sheet.
Chill for 5-10 minutes so the mixture becomes firm.
Then bake in oven for 20-25 minutes or until golden brown. Serve hot with a curry sauce and rice.
Curry Sauce:
Fry the onion in a little heated oil. Add the curry powder and fry for another minute. Add the juice, apricot jam and grated rind along with the cornflour paste. Simmer until the sauce comes to the boil and thickens. Keep stirring continuously. Season with salt and pepper.
Serve with the banana meatballs.
