Ingredients
230 g | cooked tongue |
115 g | butter, unsalted |
2 tbsp | port |
2 | anchovies |
1 tsp | mustard flour |
1 pinch(es) | mace . ground |
1 pinch(es) | cayenne pepper |
Instructions
Melt the butter.In a food processor, blend half the butter with the remaining ingredients. Season to taste.
Spoon the mixture into a pot or four ramekins. Pour the remainder of the melted butter over the top and chill in the refrigerator.
Option:
Substitute cooked ham, chicken or even beef for the tongue. For a mixed meat version used four ounces each of tongue, ham and chicken and increase the butter to 170 g and add a little extra of the other ingredients.
