Fried lamb chops with shallots braised in red wine recipe details
Ingredients
3 clove(s) | garlic, minced |
8 | lamb chops |
salt and freshly ground black pepper | |
4 sprig(s) | thyme, chopped |
2 sprig(s) | rosemary, chopped |
1 ½ | lemons, juice |
6 tbsp | olive oil |
300 g | shallots, chopped |
100 g | sugar |
250 ml | dry red wine |
100 ml | white balsamic vinegar |
Instructions
Place the lamb chops side by side into a casserole dish. Season with pepper and sprinkle with garlic, thyme and rosemary. Drizzle over the lemon juice and 5 tablespoons of oil. Allow to soak for 1,5 hours, turning occasinally.In a saucepan, caramelize the sugar. In another saucepan heat the wine and the vinegar, then pour the mixture over the caramelized sugar and stir until the sugar has dissolved. Add the shallots and simmer for 15 minutes. Season to taste with salt and pepper.
Heat the remaining oil. Fry the lamb chops until brown and crispy on both sides. Season with salt and pepper. Strain the marinade through a sieve and add the herbs and the garlic to the lamb chops. Take from heat and allow to stand for 1-2 minutes.
Serve with the shallots.
