Ingredients

275 g cake flour
2 tsp baking powder
1 ml bicarbonate of soda
1 ml salt
1 tsp vanilla sugar
125 g butter or margarine
200 g sugar, white or brown
2  egg(s)
125 ml milk
250 ml bananas, mashed

Instructions

Preheat oven to 180°C.

Sift together flour, baking powder, bicarbonate of soda and salt. Beat butter and sugar until the mixture is light and fluffy. Beat in eggs and vanilla sugar. Alternately add the flour mixture and the milk.

Mash bananas with a fork, depending on the size you should need 3 medium or 4 small bananas. Fold into the mixture. Do not blend the bananas; it will adversely affect the texture!

Grease a loaf tin and pour in batter. Bake at 180° C for 60 minutes.

Note: this is a great way to use over ripe bananas, if they are very sweet reduce the sugar amount. This can also be baked successfully with soft brown sugar.
