Banana loaf recipe details
- Ingredients
- 1-3/4 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/3 cup shortening
- 2/3 cup sugar
- 2 eggs, well beaten
- 1 cup mashed ripe banana (3 medium bananas)
Sift flour with baking powder, baking soda, and salt; set aside. Cream shortening, add sugar gradually, and continue to cream until light and fluffy. Beat in eggs, then add flour mixture alternately with bananas.
Put into a well-greased 9 x 5 x 3-inch loaf pan. Bake in a 350-degree oven for 60 to 70 minutes until loaf pulls away from sides of pan and is springy to the touch. Place pan in rack and cool 10 minutes, then turn loaf out onto rack to complete cooling.
