Ingredients
For the batter: | |
270 g | flour |
3 tbsp | cocoa powder |
3 tsp | baking powder |
150 g | sugar |
1 tsp | vanilla extract, 1-2 tsp |
1 pinch(es) | salt |
4 | eggs |
4 tbsp | brown rum |
250 g | soft butter |
3 | bananas |
For the topping: | |
500 g | whipping cream |
30 g | icing sugar |
2 tbsp | cinnamon and sugar, mixed |
50 g | banana flakes |
Instructions
For the base:Combine the flour and the cocoa powder and sieve into a bowl. Add in sugar, vanilla extract, salt, eggs, rum, and butter. Mix with a hand blender. Peel the bananas and cut into small pieces. Briefly fold the bananas in the batter.
Preheat the oven to 200°C.
Divide the batter on a greased baking tray and flatten. Bake in the preheated oven for approximately 20 minutes.
After the baking time, transfer the baking tray on a wire rack and leave the cake to cool.
For the topping:
Whisk the whipping cream with icing sugar until stiff.
Cut the cake into slices, arrange on each slice a heap of the whipped cream, sprinkle with cinnamon and sugar mixture and garnish with banana flakes.
Note:
If desired, substitute banana nectar for the rum.
