Ingredients
Serves: 30- 1/2 cup butter
- 3/4 cup sugar
- 1 egg
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1 teaspoon baking powder
- 2 cups all-purpose flour
- 1/4 pound sun dried banana
Preparation method
Prep: 1 hour | Cook: 12 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium size bowl, cream together the butter and the sugar, until light and smooth. With the electric mixer on high, mix in the egg, molasses and vanilla extract. Sift together all three spices with the baking powder and the flour. Gradually stir the sifted ingredients into the vanilla and molasses mixture. Using a wooden spoon, stir in the sun dried bananas cut into small pieces.
3. Shape the dough in walnut size balls and place them onto a well greased cookie sheet. Flatten slightly with a fork.
4. Bake the cookies for 10 to 12 minutes on a preheated oven at 350 degrees F. Let them cool for 2 minutes before pass them to a wire rack.
