Baked salmon with very tasty vegetables recipe details
You’ll like your vegetables when they’re served in a fresh lemon-garlic sauce, alongside easy baked salmon. A healthy and surprisingly easy dinner.

Ingredients
Serves: 4- 3 tablespoons vegetable oil
- 1/2 pound small red potatoes, thickly sliced
- 2 cups white mushrooms, halved
- Salt and pepper
- 1/2 pound asparagus, trimmed and cut into thirds
- 4 (6-ounce) salmon fillets
- 2 tablespoons chopped parsley
- 1 clove garlic, finely chopped
- Zest and juice of 1/2 lemon
Preparation method
Prep: 10 mins | Cook: 20 mins1. Preheat oven to 425 degrees F and line a baking sheet with foil.
2. Pour 1 1/2 tablespoons oil into a large cast-iron skillet and set over medium-high heat. Cook potatoes and mushrooms in hot oil for about 5 minutes to brown, seasoning with salt and pepper. Then place the skillet with vegetables in the oven and cook for 10 minutes.
3. Add asparagus to the skillet, stir well, and bake for another 3 minutes.
4. While vegetables are cooking: Coat salmon with 1 tablespoon olive oil and sprinkle with salt and pepper. Set skin-side-down on the foil-lined baking sheet.
5. Bake salmon for 10 minutes, until it flakes easily and is just cooked through.
6. Stir parsley, garlic, lemon zest, lemon juice, and 1 1/2 teaspoons olive oil together in a bowl. When vegetables are done cooking, drizzle with the lemon mixture and stir to coat.
7. Serve salmon with vegetables on the side.
