Ingredients

600 g	Purple Majesty potatoes, peeled and lengthwise quartered
2 large	carrot, peeled and lengthwise quartered
1	parsnip, peeled and lengthwise quartered
1	parsley root, peeled and lengthwise quartered
2 tbsp	vegetable oil
1 handful	parsley, chopped
	salt and freshly ground black pepper
150 g	streaky bacon, cut into broad strips

Instructions

Preheat the oven to 180°C, fan on.

Divide the potatoes on a baking tray and drizzle with the oil. Toss until well coated. Season with salt. Bake for 20 minutes. Add the roots and the bacon, toss again and add a little more oil, if necessary. Bake for another 20 minutes or until all the vegetables are cooked and the bacon is crispy. Season with pepper.

Serve sprinkled with parsley.
