Baked vegetables recipe details
Ingredients
600 g | peas, fresh, shelled |
400 g | potatoes, peeled and diced |
400 g | tomatoes, peeled and diced |
1 bunch(es) | spring onions, sliced |
1 bunch(es) | dill, chopped |
50 ml | olive oil |
1 tbsp | oregano |
2 tbsp | lemon juice |
salt and pepper |
Instructions
Preheat the oven to 180°CIn a roasting tin, heat the oil. Fry the onions over low heat for 5 minutes. Add the potatoes and cook for 5 more minutes. Season with salt and pepper.
Stir in the peas, dill, tomatoes and oregano. Season with salt, pepper and 1 tablespoon of lemon juice. Add a little water.
Bake for 30 minutes or until the water has evaporated and the potatoes are done. Toss occasionally.
Season to taste with salt, pepper and lemon juice.
