Ingredients

600 g peas, fresh, shelled
400 g potatoes, peeled and diced
400 g tomatoes, peeled and diced
1 bunch(es) spring onions, sliced
1 bunch(es) dill, chopped
50 ml olive oil
1 tbsp oregano
2 tbsp lemon juice
salt and pepper

Instructions

Preheat the oven to 180°C

In a roasting tin, heat the oil. Fry the onions over low heat for 5 minutes. Add the potatoes and cook for 5 more minutes. Season with salt and pepper.

Stir in the peas, dill, tomatoes and oregano. Season with salt, pepper and 1 tablespoon of lemon juice. Add a little water.

Bake for 30 minutes or until the water has evaporated and the potatoes are done. Toss occasionally.

Season to taste with salt, pepper and lemon juice.
