Baked Potatoes Casserole recipe

Ingredients
6 slice(s) | bacon |
2 kg | potatoes, cooked, mashed |
500 ml | milk |
450 g | Cheddar cheese, grated |
230 g | cream cheese |
1 tsp | salt and pepper, to taste |
200 ml | sour cream |
fresh parsley, chopped, for garnish |
Instructions
Cook bacon until crisp, 8-10 minutes. Remove bacon, drain and reserve 2 tablespoons drippings. Crumble bacon and set aside.
Stir together bacon drippings, potatoes, milk, cream cheese and 200 g Cheddar cheese in a large microwave safe bowl. Microwave on High 4 minutes. Stir in sour cream and season with salt and pepper.
Spoon potato mixture into a lightly greased baking dish and sprinkle evenly with crumbled bacon and remaining Cheddar cheese.
Bake at 180°C for 45 minutes. Let stand 10 minutes before serving. Garnish with chopped parsley.
