Baked Parmesan Pike recipe
|700 g||pike fillets, washed, pat dry, cut into serving size pieces|
|80 ml||olive oil|
|2 tbsp||lemon juice|
|120 g||bread crumbs|
|120 g||Parmesan cheese, grated|
|250 g||tomatoes, diced|
|1 tbsp||basil flakes|
Preheat oven to 180°C.
Combine oil and lemon juice in a bowl.
Combine breadcrumbs, Parmesan, basil, salt and pepper in a another bowl and place next to the oil and lemon mixture.
Dip pike first into oil and lemon mixture and then coat with second mixture.
Place pike in a baking dish, scatter tomatoes around the fish and then bake for 15-20 minutes.
