Ingredients

700 g pike fillets, washed, pat dry, cut into serving size pieces
80 ml olive oil
2 tbsp lemon juice
120 g bread crumbs
120 g Parmesan cheese, grated
250 g tomatoes, diced
1 tbsp basil flakes
1 tbsp butter

Instructions

Preheat oven to 180°C.

Combine oil and lemon juice in a bowl.

Combine breadcrumbs, Parmesan, basil, salt and pepper in a another bowl and place next to the oil and lemon mixture.

Dip pike first into oil and lemon mixture and then coat with second mixture.

Place pike in a baking dish, scatter tomatoes around the fish and then bake for 15-20 minutes.
