Baked parmesan pike recipe details
Ingredients
700 g | pike fillets, washed, pat dry, cut into serving size pieces |
80 ml | olive oil |
2 tbsp | lemon juice |
120 g | bread crumbs |
120 g | Parmesan cheese, grated |
250 g | tomatoes, diced |
1 tbsp | basil flakes |
1 tbsp | butter |
Instructions
Preheat oven to 180°C.Combine oil and lemon juice in a bowl.
Combine breadcrumbs, Parmesan, basil, salt and pepper in a another bowl and place next to the oil and lemon mixture.
Dip pike first into oil and lemon mixture and then coat with second mixture.
Place pike in a baking dish, scatter tomatoes around the fish and then bake for 15-20 minutes.
