Deep fried eggs on salad recipe details
Ingredients
4 | hard boiled eggs, peeled |
1 | raw egg |
3 handful | breadcrumbs |
3 tbsp | coconut flakes |
250 g | lettuce |
1 bunch(es) | chives, chopped |
250 g | cherry tomatoes, halved |
200 g | fresh spinach |
5 tbsp | balsamic vinegar |
salt and freshly ground black pepper | |
sugar | |
4 tbsp | olive oil |
3 tbsp | flour |
200 ml | oil for deep-frying |
Instructions
Whisk together the vinegar and the olive oil. Season to taste with salt, pepper and sugar. Stir in the chives.Beat the raw egg into a deep plate. In a separate plate, mix together the breadcrumbs and the coconut flakes. First turn the cooked eggs in the flour, than in the the beaten egg and finally in the breadcrumb mixture.
In a deep pan, heat the oil and fry the eggs until golden brown and crispy. Remove from the heat and drain on kitchen paper.
Mix the tomatoes with spinach, lettuce and the dressing. Arrange the salad on plates and top each plate with a fried egg.
