Grilled peaches with fresh cherry sauce recipe details
Ingredients
Peaches: | |
4 medium | peaches, cut in half, stone removed |
2 tbsp | butter, unsalted |
2 tbsp | brown sugar |
240 ml | vanilla ice cream |
For the cherry sauce: | |
500 g | dark cherries, pitted |
1 tbsp | sugar |
120 ml | dry red wine |
1 tsp | balsamic vinegar |
1 tsp | cherry liqueur |
Instructions
Cherry sauce:Combine cherries, sugar, red wine, and balsamic vinegar. Bring to a simmer and cook, until the fruit is soft, 6 to 8 minutes. Stir occasionally.
Transfer the mixture to a blender and purée until completely smooth.
Return the mixture to the pan and add the cherry liqueur. Simmer until reduced to about 60 ml, about 2 minutes.
Peaches:
Place the halves in a medium bowl.
Combine butter and brown sugar in a small saucepan over low heat and bring to a simmer. Stir until butter has melted and sugar has dissolved.
Coat the peaches with the butter mixture and grill the peaches until the peaches are soft, 10 to 12 minutes, turning once while grilling.
To serve layer each serving dish with 2 peach halves, 1 scoop ice cream, and 1 tablespoon cherry sauce.
