Ingredients
4 medium | courgettes |
500 g | minced meat, beef and pork |
2 can(s) | peeled tomatoes (pelati) |
2 sprig(s) | rosemary, finely chopped leaves |
2 | onions, chopped |
2 clove(s) | garlic, minced |
salt and freshly ground black pepper | |
cayenne pepper | |
80 g | freshly grated Parmesan cheese |
olive oil | |
4 sprig(s) | parsley, chopped |
Instructions
In a saucepan, sauté the onions in oil until translucent. Take out half of the onions and set aside.Add the garlic to the onions in the saucepan and cook stirring for a minute. Add the tomatoes and rosemary and bring to a boil. Season to taste with salt and pepper. Cover and cook over low heat for approximately 20 minutes.
Scoop out the flesh of the courgettes, leaving an approximately ˝ cm shell.
Chop the courgette flesh and transfer into a bowl. Add the minced meat, most of the Parmesan cheese, the reserved onions and the parsley and season to taste with salt and cayenne pepper. Spoon the mixture into the courgette shells.
Preheat the oven to 200°C, fan on.
Pour the tomato sauce onto the bottom of a wide and shallow casserole dish and place the courgettes into the sauce. Sprinkle with the remaining cheese. Bake for 40 minutes.
Serve with fresh crusty white bread to mop up the sauce.
