Mother s apple cake recipe details
Ingredients
500 ml | apple sauce, thick or puréed apple |
75 g | cake or bread crumbs, or a mixtureof the two |
8 | almond macaroon biscuits, OR |
12 | amaretti biscuits |
1 glass(es) | sweet sherry, large |
60 g | butter |
2 tbsp | sugar |
whipped cream, for topping | |
currant jelly, to decorate |
Instructions
Brown the crumbs with sugar and butter over a slow heat, tossing to mix. Do not allow to burn. Remove from heat, set aside and allow to cool.Divide the almond macaroons or amaretti biscuits in the bottom of long dessert glasses. Divide the sherry between them and allow them to absorb the wine and soften.
Add a layer of apple sauce and follow with a layer of crumbs. Alternate layers until all ingredients are used. Top with whipped cream and dot with several small blobs of currant jelly to serve.
