Baked chicken breasts vegetables recipe details
I got in from work one night and wanted something a little lighter. I had some frozen chicken breasts and fresh veggies. I added the spices at random, and it turned out really good, I thought. There were no complaints from the others either.

Ingredients
Serves: 4- 4 frozen boneless skinless chicken breasts
- 8 carrots, sliced into 1/2-inch pieces
- 4 green bell peppers, seeded and sliced
- 8 green onions, chopped
- 8 stalks of celery, chopped
- 1/4 cup Italian flat leaf parsley, chopped
- 1 teaspoon salt
- 4-6 turns of black pepper mill
- 1 teaspoon Italian seasoning
- 1 teaspoon chili powder
- 1 teaspoon lemon pepper
- 1/2 cup olive oil
Preparation method
Prep: 10 mins | Cook: 30 mins1. Pre-heat oven to 375 degrees F.
2. Place the chicken breasts and vegetables on a baking sheet. Drizzle all with about 1/2 cup of olive oil.
3. Sprinkle all spices over the baking sheet, adding more to taste.
4. Bake for about 30 minutes or so or until chicken is no longer pink in the middle and has reached an internal temperature of 165 degrees F.
