Ingredients

900 g butternut squash, peeled, seeded and cubed
5  shallots, peeled
4 sprig(s) fresh thyme
2 tsp vegetable oil
2 ½ tsp maple syrup
salt and freshly ground black pepper

Instructions

Preheat the oven to 190°C.

In a bowl, mix together the squash cubes, shallots and some of the thyme sprigs. In a separate bowl, combine the oil, maple syrup, salt and pepper. Stir well. Pour the oil mixture into the squash mixture and stir well.

Place the squash mixture into a roasting tin and bake for 25-35 minutes or until tender. Stir occasionally.

To serve, garnish with the remaining thyme sprigs.
