Baked butternut squash recipe details
Ingredients
900 g | butternut squash, peeled, seeded and cubed |
5 | shallots, peeled |
4 sprig(s) | fresh thyme |
2 tsp | vegetable oil |
2 ½ tsp | maple syrup |
salt and freshly ground black pepper |
Instructions
Preheat the oven to 190°C.In a bowl, mix together the squash cubes, shallots and some of the thyme sprigs. In a separate bowl, combine the oil, maple syrup, salt and pepper. Stir well. Pour the oil mixture into the squash mixture and stir well.
Place the squash mixture into a roasting tin and bake for 25-35 minutes or until tender. Stir occasionally.
To serve, garnish with the remaining thyme sprigs.
