Baked buttercup squash with blue cheese and walnuts recipe details
Ingredients
600 g | buttercup squash, in wedges, peeled and seeds removed |
lime juice | |
runny honey | |
1 handful | walnuts, coarsley chopped |
50 g | blue Stilton, crumbled |
Instructions
Put the squash wedges into an ovenproof dish and bake at 180°C for about 30 minutes until done, but still a bit firm.Drizzle with lime juice and honey, and sprinkle with the cheese crumbles and the nuts. Place into the hot oven for another 5 minutes.
Note:
You may use any other squash or pumpkin if no buttercup available.
