Baked apple almond breakfast pudding recipe details
- Ingredients
- 5 apples (Golden Delicious, Cortland, McIntosh, or Gravenstein) – about 2 pounds
- 1 teaspoon vanilla extract
- 1 cup sugar, divided
- 2 eggs
- 1/4 teaspoon almond extract
- 1/4 teaspoon salt
- 1 cup flour
- 1/2 cup unsalted butter, melted
- 1/2 cup finely chopped, toasted almonds
Preheat oven to 325 degrees. Butter a 2-quart baking dish (such as a round souffle dish). Peel, halve, and core apples; cut into 1/2-inch cubes. Place apples in a large bowl and toss with vanilla and 2 tablespoons sugar. Spread apples in dish.
In small bowl, beat remaining sugar with eggs, almond extract, salt, flour, and melted butter until smooth. Stir in almonds. Spread batter evenly over fruit. Bake until the top is golden and apples can be pierced easily with a thin, sharp knife, for 50 to 60 minutes. Serve the pudding warm. Substitute fresh apricots in place of apples for a change. Guests love this dish!
