Ingredients
3 | eggplants, cut into small cubes |
2 large | tomatoes |
2 clove(s) | garlic |
1 tsp | ginger |
1 tsp | coriander powder |
1 tsp | cumin seeds |
¼ tsp | turmeric powder |
¼ tsp | chili powder or flakes |
½ tsp | Chaat Masala |
some | fresh coriander leaves |
some | cooking oil |
Instructions
Heat some oil in a pan on medium heat and fry the garlic and ginger. Add the spices except the fresh coriander. Add the chopped tomatoes and let them cook until dissolved, 5-7 minutes. Add eggplants and stir well.Cover the pan and let steam build. If it is too dry add some water. Now let it steam for 20-30 minutes. Do not open, else the steam would escape. Shake the pan, rather than opening it.
Sprinkle with fresh chopped coriander leaves and serve.
