Ingredients

3  eggplants, cut into small cubes
2 large tomatoes
2 clove(s) garlic
1 tsp ginger
1 tsp coriander powder
1 tsp cumin seeds
¼ tsp turmeric powder
¼ tsp chili powder or flakes
½ tsp Chaat Masala
some fresh coriander leaves
some cooking oil

Instructions

Heat some oil in a pan on medium heat and fry the garlic and ginger. Add the spices except the fresh coriander. Add the chopped tomatoes and let them cook until dissolved, 5-7 minutes. Add eggplants and stir well.

Cover the pan and let steam build. If it is too dry add some water. Now let it steam for 20-30 minutes. Do not open, else the steam would escape. Shake the pan, rather than opening it.

Sprinkle with fresh chopped coriander leaves and serve.
