Bacon wrapped red potatoes with garlic cream sauce recipe details

Ingredients
Makes: 30 bites- 2 whole garlic bulbs
- 1 tablespoon olive oil
- 15 small red potatoes, halved
- 15 bacon strips, cut in half width-wise
- 2 cups shredded smoked Gouda cheese
- 1 teaspoon ground black pepper
- 2 cups sour cream
- 1/4 cup fresh cilantro leaves
Preparation method
Prep: 50 mins | Cook: 10 mins1. Preheat oven to 425 degrees F.
2. To roast the garlic, cut the tops off the bulbs of garlic and drizzle olive oil over them. Wrap in foil and place in hot oven for about 35 minutes, until the cloves are soft and golden brown. Allow to cool.
3. While the garlic is cooking, cover potatoes with water in a large pot and bring to boil over medium heat. Simmer on low for about 10 minutes, until potatoes are fork-tender.
4. While potatoes are simmering, pre-cook the bacon: In a skillet over medium heat, cook the bacon for about 6 minutes. Don’t get it all crispy, it’s going in the oven later. Drain on paper towels.
5. On each potato half, place a tablespoon of the shredded smoked Gouda. Wrap a strip of bacon around the bite and use a toothpick to hold it in place. Arrange bites on a baking sheet.
6. Lower oven temperature to 375 degrees, then bake the potato bites for about 15 minutes, or until bacon is crisp.
7. While the potato bites are baking, make the sauce. In a food processor, pulse the garlic cloves, sour cream, and cilantro together until smooth. Serve as dipping sauce.
