I had a bunch of chicken and bacon to use up, and some leftover chipotle peppers and goat cheese. This turned out surprisingly awesome, and it’s very impressive for how little work actually goes into it. Would be good for date night, if your date likes spicy food.

Ingredients
Serves: 2- 2 boneless, skinless chicken breasts
- 1 1/2 ounces soft goat cheese
- 1 1/2 tablespoons chopped chipotle peppers in adobo sauce
- 1/2 shallot, chopped finely
- 4 slices thick-cut bacon
- Black pepper, to taste
Preparation method
Prep: 10 mins | Cook: 40 mins1. Preheat oven to 350 degrees F and coat a small baking dish with nonstick cooking spray or olive oil.
2. Place chicken between two layers of plastic wrap and use a can of beans, a meat mallet, or a rolling pin to flatten to about 1/2-inch even thickness.
3. Combine cheese, chipotle peppers, and shallot in a small glass bowl. Microwave for 10 seconds to soften the cheese, then stir well to incorporate the ingredients.
4. Spread the chipotle mixture on top of both of the chicken breasts. Roll the chicken breasts up, then wrap each with 2 slices of bacon.
5. Set the chicken in the baking dish, bacon ends facing down. Sprinkle with black pepper to taste.
6. Bake for 40 minutes, or until chicken is no longer pink in the middle and has reached an internal temperature of 160 degrees F. Serve.
