Ingredients

Serves: 6
  • 4 bacon slices, chopped
  • 1 1/2 pounds beef stew meat, cut into 1/2-inch pieces
  • 1 onion, chopped
  • 4 red potatoes, cut into 1/2-inch cubes
  • 1 1/2 cups fresh baby carrots, sliced in half lengthwise
  • 1 cup frozen corn
  • 1/4 cup pearl barley
  • 2 (14 1/2 ounce) cans beef broth
  • 1 (14 1/2 ounce) can diced tomatoes with Italian seasonings, undrained
  • 1 (12 ounce) jar home-style beef gravy
  • 1/2 teaspoon black pepper, to taste

Preparation method

Prep: 30 mins | Cook: 8 hours

1. Brown bacon in a skillet over medium heat. Set bacon on paper towels, reserving the bacon fat.
2. Add stew meat and onion to the bacon fat. Cook for about 8 minutes to brown. Pour off excess fat.
3. Place potatoes, carrots, corn, and barley in a large slow cooker. Add the beef stew meat and sprinkle with bacon.
4. In a separate bowl, whisk broth with tomatoes, gravy, and black pepper. Drizzle over the stew meat.
5. Cook on Low for about 8 hours. Stir and serve.
