Bacon Dumplings recipe
Ingredients
250 g | bacon, if available Tyrolean speck |
6 | bread rolls |
¼ l | milk |
2 | shallots |
1 bunch(es) | parsley |
60 g | flour |
sea salt and pepper | |
2 | eggs |
1 l | beef stock or 1 l salted water |
3 tbsp | butter |
1 bunch(es) | chives, finely chopped |
Instructions
Cut the speck and the bread rolls into fine cubes. Heat the milk. Finely chop the shallots and the parsley.
In a large skillet, sauté the speck together with the bread and the shallots for a minute. Add the parsley, toss and transfer the mixture into a bowl. Pour over the hot milk and dust with flour. In a separate bowl, whisk the eggs and season with salt and pepper. Stir the eggs into the bread mixture. Knead briefly, then leave to stand for approximately 15 minutes.
With damp hands, shape eight small dumplings. Bring the beef stock or salted water to the boil. Place in the dumplings and simmer for 15-20 minutes. Take out with a slotted spoon and drain in a sieve.
Melt the butter, add the chives and the dumplings and toss gently, then serve.
