This shortbread-style cookie isn’t for Girl Scouts. Not much sweetness, just the thrill of bacon in every bite.

Ingredients
Makes: 30 cookies- 4 slices bacon, chopped
- 2 cups flour
- 1/2 cup butter, chilled
- 1 egg
- 1/8 teaspoon salt
- 3 tablespoons heavy cream
- 1/8 teaspoon black pepper
- 1 egg yolk, beaten
Preparation method
Prep: 15 mins | Cook: 25 mins | Extra time: 2 hours, chilling1. Cook bacon in a large skillet over medium heat until crispy. Drain on paper towels.
2. Combine flour, butter, egg, salt, and cream in a mixing bowl and stir. Pour out onto a floured surface and knead with your hands until the dough is smooth, working in the bacon and black pepper as you go.
3. Form dough into a log (about 1 1/2-inches thick). Cover tightly in plastic wrap and place in refrigerator for 2 hours.
4. Preheat oven to 350 degrees F and coat a baking sheet with nonstick cooking spray.
5. Unwrap cookie dough and cut into 1/4-inch slices. Arrange on prepared baking sheet and brush with egg yolk.
6. Bake for 12 to 15 minutes, until golden-brown. Cool before serving.
