I make my quesadillas in the panini maker, but they can be done in a non-stick frying pan as well. This is a great way to use left-over chicken.

Ingredients

Makes: 1 quesadilla

• 1 teaspoon chopped jalapeno pepper
• 1 tomato, seeded and chopped
• 1/2 cup cooked chicken meat, diced or shredded
• 1 tablespoon chopped cilantro
• 1 tablespoon chopped green onions
• salt and pepper to taste
• 2 medium-size soft tortillas
• 1/2 cup shredded sharp cheddar cheese

Preparation method

Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, resting

1. In a bowl, mix the jalapeno, tomato, chicken, cilantro and green onions. Season with salt and pepper, cover and let sit, covered, for 30 minutes.
2. Sprinkle half of the cheese over on one piece of tortilla. Spread the chicken mixture and top everything with the remaining cheese. Place the other tortilla on top.
3. Cook the quesadilla on the panini maker until the cheese has melted and the tortillas are crispy. Cut in wedges with a sharp knife or a pizza cutter and serve immediately.Drink pairing
