Ingredients
Serves: 3- 1/4 cup finely chopped onion
- 1 jalapeno pepper, seeded and chopped
- 1 tablespoon canola oil
- 2 (6-inch) corn tortillas, cut into thin strips
- 4 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 (6-inch) flour tortillas, warmed
- 1/2 cup crumbled queso fresco
- 1/4 cup chopped seeded tomato
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro
Preparation method
Prep: 10 mins | Cook: 10 mins1. Pour oil into a skillet and place over medium heat. Cook the onion and jalapeno in hot oil for about 5 minutes to soften, then add corn tortillas. Continue to cook for 3 more minutes.
2. Combine eggs, salt, and pepper in a bowl. Pour into the skillet with the onion, jalapeno, and corn tortillas. Cook until set, breaking up into smaller pieces as the eggs cook.
3. Spoon egg mixture into warmed tortillas and top with cheese, tomato, sour cream, and cilantro. Serve.
