Ingredients
1 ½ kg | chicken, suitable for boiling, about 3-3Żlb, 1.4-1.7Kg, giblets removed |
2 tsp | sugar |
3 slice(s) | streaky bacon |
450 g | shin of beef |
900 g | leeks, cut lengthwise and rinsed to remove any grit and soil |
1 large | onion |
150 ml | Scotch whisky |
2.4 liter(s) | water |
1 tsp | dried tarragon |
salt and pepper | |
8 | prunes, dried, soaked in water |
Instructions
Pour the water into a large saucepan, with the tarragon, whisky and sugar and bring to a boil.Chop the bacon and place in a large bowl with the chicken and beef. Pour the whisky marinade over them and leave to soak overnight.
Empty contents into a large stockpot. Chop all the leeks but one, and the onion and add to the pot. Season with salt and pepper and bring to a boil. Cover and simmer for at least 2 hours, removing any scum that rises to the surface.
Remove the chicken from the pot and remove and discard the skin and bones. Chop the meat into small pieces and return to the pot. Remove and cut up the shin of beef and return the pieces to the pot.
Add the prunes and chop the final leek, and simmer for a further 10-15 minutes.
