Ingredients
2 | salmon fillets, frozen |
1 | lime |
5 stalk(s) | spring onions |
1 large can(s) | corn |
2 | long red chilies |
1 tbsp | red Thai curry paste |
200 ml | coconut cream |
2 tbsp | Thai fish sauce |
salt | |
black pepper |
Instructions
Preheat oven to 180° C.Wash and dry salmon fillets, sprinkle with some salt, pepper, and juice from 1/2 lime, cut other half of the lime into thin slices.
Chop spring onions and red chillies and mix with corn. Place in a casserole dish.
Mix red curry paste with coconut cream, add fish sauce, salt and black pepper and pour over the vegetables. Add salmon fillets and cover them with lime slices.
Cook in the oven for about 40 minutes. Serve with Thai fragrant rice.
