Aubergine and Mushroom Pasta Sauce recipe
Ingredients
60 ml | olive oil |
4 clove(s) | garlic |
1 medium | aubergine, peeled, chopped |
2 | green bell pepper, seeded, chopped |
500 g | mushrooms, chopped |
200 g | tomatoes, chopped |
1 tsp | oregano |
1 tsp | basil |
1 tsp | cayenne pepper |
340 ml | tomato paste |
500 ml | water or white wine |
Instructions
Heat olive oil in a pan and sauté garlic for about 1 minute. Be careful not to burn.
Add aubergine, peppers and mushrooms to the pan and sauté for five minutes, stirring frequently.
Add remaining ingredients, cover and simmer gently for about one hour. Stir occasionally and add more liquid if necessary.
