Aubergine and Tomato Salad with Raisins recipe

Ingredients
1 handful | raisins |
rum or cognac or orange juice | |
2 | aubergines |
salt and pepper | |
some | flour |
2 clove(s) | garlic |
500 g | ripe tomatoes |
1 | jalapeno pepper |
olive oil | |
1 tsp | tomato puree |
2 tbsp | red wine |
4 tbsp | water |
1 sprig(s) | mint |
4 tbsp | yoghurt |
Instructions
Soak the raisins overnight in rum, cognac or orange juice.
Dice the aubergines, sprinkle with salt and leave to stand until liquid comes out. Pat dry with a kitchen towel and turn the aubergine cubes in flour. Finely chop the garlic. Seed and coarsely dice the tomatoes. Seed and finely dice the jalapeño pepper.
In a skillet, sear the aubergines in hot oil from all sides until golden brown. Add the garlic and cook for a minute, then add the tomatoes and the chili pepper. Stir in the raisins and the tomato purée. Deglaze with red wine and water and cook for another minute. Remove from the heat and allow to cool slightly. Season to taste with chopped mint, salt and pepper.
Garnish each portion with 1 tablespoon of yoghurt and serve.
