Ingredients

1 kg aubergines, cut into small pieces
3 tbsp olive oil
240 ml prepared tomato sauce
2 tbsp fresh basil, chopped
400 g mozzarella cheese, shredded
115 g Parmesan cheese, grated
200 g ricotta cheese
salt and pepper, to taste

Instructions

Preheat oven to 180°C.

Place chopped aubergines in a bowl and toss with the olive oil to coat. Season with salt and pepper. Place in a baking dish and roast, tossing occasionally, for 20 minutes or until golden.

Reduce the oven temperature to 120°C and add the tomato sauce and basil to the baking dish. Toss to coat.

Layer all three cheeses on top and bake for further 20 minutes.
