Aubergine and mozzarella bake recipe details
Ingredients
1 kg | aubergines, cut into small pieces |
3 tbsp | olive oil |
240 ml | prepared tomato sauce |
2 tbsp | fresh basil, chopped |
400 g | mozzarella cheese, shredded |
115 g | Parmesan cheese, grated |
200 g | ricotta cheese |
salt and pepper, to taste |
Instructions
Preheat oven to 180°C.Place chopped aubergines in a bowl and toss with the olive oil to coat. Season with salt and pepper. Place in a baking dish and roast, tossing occasionally, for 20 minutes or until golden.
Reduce the oven temperature to 120°C and add the tomato sauce and basil to the baking dish. Toss to coat.
Layer all three cheeses on top and bake for further 20 minutes.
