Ingredients

150 g rice
300 g carrots, grated
salt and pepper
3  eggs
6 tbsp oil
½ bunch(es) spring onions, sliced
½ bunch(es) parsley, chopped
4 tbsp crème fraîche
100 g freshly grated Cheddar cheese
60 g roasted onions

Instructions

Cook the rice in salted water until tender. In a bowl, mix the rice with eggs and the carrots. Season with salt and pepper. In a pan, heat the oil. Fry spoonfuls of the mixture until golden on both sides.

In a bowl, mix the crème fraîche with onions and parsley. Season to taste with salt and pepper. Fold in the roasted onions.

Transfer the fritters onto a lined baking tray. Top each fritter with a spoonful of the cream mixture. Sprinkle with the cheese. Roast in the preheated oven at 160°C until golden.

Serve immediately.
