Au gratin rice and carrot fritters recipe details
Ingredients
150 g | rice |
300 g | carrots, grated |
salt and pepper | |
3 | eggs |
6 tbsp | oil |
½ bunch(es) | spring onions, sliced |
½ bunch(es) | parsley, chopped |
4 tbsp | crème fraîche |
100 g | freshly grated Cheddar cheese |
60 g | roasted onions |
Instructions
Cook the rice in salted water until tender. In a bowl, mix the rice with eggs and the carrots. Season with salt and pepper. In a pan, heat the oil. Fry spoonfuls of the mixture until golden on both sides.In a bowl, mix the crème fraîche with onions and parsley. Season to taste with salt and pepper. Fold in the roasted onions.
Transfer the fritters onto a lined baking tray. Top each fritter with a spoonful of the cream mixture. Sprinkle with the cheese. Roast in the preheated oven at 160°C until golden.
Serve immediately.
