Ingredients
500 g | button mushrooms, halved |
1 bunch(es) | spring onions, sliced |
1 tbsp | thyme, chopped leaves |
600 g | pork fillet, cut into 8 medallions |
250 ml | Hollandaise sauce |
salt and freshly ground black pepper | |
4 tbsp | oil |
Instructions
Season the meat with salt and pepper. In a large pan heat 2 tablespoons of the oil. Fry the medallions briefly on both sides until slightly golden. Remove from the pan and place into a casserole dish.
Add 2 tablespoons of oil into the hot pan. Add the mushrooms and cook for a couple of minutes. Add the spring onions and cook for 1-2 more minutes. Season to taste with salt and pepper. Divide the mushrooms on top of the meat.
Stir the thyme into the Hollandaise sauce. Coat the mushrooms and meat with the sauce. Bake in the preheated oven at 180°C for 25 minutes.
Serve with mashed potatoes.
