|1 ½ kg||asparagus, woody ends removed|
|salt and pepper|
|120 g||mixed herbs, chopped|
|400 g||sour cream|
|130 g||whipped cream|
|3||hard boiled eggs, diced|
Cook the asparagus in salted water with a dash of sugar over medium heat for 10-15 minutes.
In a bowl, mix together the sour cream and the mixed herbs. Fold in the whipped cream and the egg. Season to taste with salt and pepper.
Arrange the cooked asparagus with the sauce on preheated plates and serve immediately.
