Au gratin pork escalopes with vegetables recipe details
Ingredients
1 | courgette, peeled and sliced |
2 | tomatoes, sliced |
2 | lemons, 1 sliced, 1 zested |
5 sprig(s) | parsley, chopped |
4 | pork escalopes |
2 tsp | breadcrumbs |
3 tbsp | oil |
salt and freshly ground black pepper | |
1 clove(s) | garlic, minced |
2 tsp | butter |
Instructions
In a pan, heat 1 tablespoon of oil and sauté the courgette until soft, but still a bit firm to the bite. Season with salt and pepper. Take out of the pan and set aside.Heat another tablespoon of oil and sauté the onion until slightly golden. Divide the onions in a casserole dish. Preheat the oven to 175°C.
Season the escalopes with salt and pepper. Heat the remaining oil in the pan and fry the escalopes over high heat for 1-2 minutes each side. Place the escalopes side by side in the casserole dish. Top with the courgettes, tomatoes and lemon slices.
Mix together the garlic, parsley and lemon zest. Melt the butter in the pan and roast the breadcrumbs until golden. Stir in the parsley mixture and divide the mixture on top of the vegetables. Bake for 15 minutes.
