Au gratin mushrooms recipe details
Ingredients
8 | portobello mushrooms |
150 g | freshly grated Cheddar cheese |
2 large | tomatoes, peeled, seeded and diced |
25 g | fresh herbs, chopped |
salt and pepper | |
2 | eggs |
8 slice(s) | soft white bread |
100 g | butter |
Instructions
Preheat the oven to 200°C.Remove the stems of the mushrooms and chop the stems finely. Mix with the tomatoes, herbs and cheese. Season with salt and pepper. Separate the eggs and stir the egg yolks into the mixture. Whisk the egg whites until stiff and fold the beaten egg white into the mixture.
Transfer the mushrooms upside down onto a lined baking tray and spoon the mixture into the mushrooms. Bake in the oven for 20-25 minutes.
With a cutter, cut out large rounds of the bread. Brush the rounds on both sides with melted butter and place into the oven for the last 10 minutes of baking time.
To serve, place onto each roasted bread a stuffed mushroom. Serve hot.
