Ingredients

8  portobello mushrooms
150 g freshly grated Cheddar cheese
2 large tomatoes, peeled, seeded and diced
25 g fresh herbs, chopped
salt and pepper
2  eggs
8 slice(s) soft white bread
100 g butter

Instructions

Preheat the oven to 200°C.

Remove the stems of the mushrooms and chop the stems finely. Mix with the tomatoes, herbs and cheese. Season with salt and pepper. Separate the eggs and stir the egg yolks into the mixture. Whisk the egg whites until stiff and fold the beaten egg white into the mixture.

Transfer the mushrooms upside down onto a lined baking tray and spoon the mixture into the mushrooms. Bake in the oven for 20-25 minutes.

With a cutter, cut out large rounds of the bread. Brush the rounds on both sides with melted butter and place into the oven for the last 10 minutes of baking time.

To serve, place onto each roasted bread a stuffed mushroom. Serve hot.
