stuffed mediterranean style pork roast recipe details
Ingredients
30 g | green olives, pitted and chopped |
50 g | black olives, pitted and chopped |
salt and pepper | |
150 g | Feta cheese, crumbled |
3 sprig(s) | oregano, chopped |
1 | red bell pepper, chopped |
4 | spring onions, sliced |
1 kg | pork loin |
350 ml | beef stock |
Instructions
Mix the Feta cheese with oregano, olives, bell peppers and the spring onions. Season with pepper. With a sharp knife, make a deep incision lengthwise into the pork loin to create a pocket. Season the meat with salt and pepper. Fill ¾ of the Feta mixture into the pocket. Secure with toothpicks.Transfer the roast into a casserole dish and add the stock. Roast in the preheated oven at 180°C for 45 minutes. Reduce the heat to 130°C and roast for 30 minutes more. Occasionally brush the roast with the gravy. Remove the roast from the casserole and let rest for some minutes.
Strain the gravy into a saucepan, add the remaining cheese mixture and bring to the boil. Cook stirring until the cheese has melted.
Cut the roast into slices and serve with the sauce.
