Au gratin bacon wrapped chicken breasts recipe details
Ingredients
4 | chicken breasts |
4 slice(s) | bacon |
1 bunch(es) | spring onions, sliced |
5 sprig(s) | tarragon, chopped |
75 g | freshly grated Cheddar or Gouda cheese |
6 tbsp | single cream |
salt and freshly ground black pepper | |
2 tbsp | oil |
1 clove(s) | garlic, minced |
3 tbsp | butter |
1 tbsp | flour |
200 ml | chicken stock |
2 tbsp | mustard |
some | sugar |
Instructions
Season the chicken breasts with pepper and wrap them with bacon.In a pan, heat the oil. Fry the chicken breasts from both sides for 3-4 minutes. Remove from the pan. Melt 1 tablespoon of butter and sauté the spring onions. Season with salt and pepper. Remove from the pan. Melt the remaining butter and sauté the garlic. Stir in the flour and cook stirring until pale yellow. Whisk in the cream and the stock. Bring to a boil, stirring constantly with a wire whisk. Stir in the tarragon and the mustard and cook for 5 minutes. Season to taste with salt, sugar and pepper.
Preheat the oven to 175°C.
Divide the chicken breasts and the spring onions in a buttered casserole dish. Pour over the sauce. Sprinkle with the cheese. Bake for 15-20 minutes.
