Ingredients

20  prawns, peeled and deveined
500 g spring onions, sliced
1  ripe mango, peeled and diced
30 g ginger, finely sliced
2 clove(s) garlic, chopped
3 tbsp oil
100 g sweet and sour chili sauce
salt and pepper
1 tbsp cilantro, chopped
chili powder

Instructions

In a pan heat 1 tablespoon of oil and fry the prawns for 4-6 minutes or until pink and just done. Season to taste with salt, pepper and garlic.

In a separate pan heat the remaining oil and sauté the spring onions for 3-4 minutes. Add the ginger, mango and cilantro. Sauté for 2-3 minutes. Season to taste with chili sauce, chili powder and salt.

Serve the prawns and the spring onions with rice.
