Ingredients
400 g | pork escalopes, cut into stripes |
soy sauce | |
2 tbsp | sherry, dry |
4 | tomatoes, diced |
1 | green chilli, chopped |
3 | spring onions, sliced |
1 bunch(es) | coriander greens, chopped |
3 tbsp | sesame oil |
lime juice | |
120 g | peas, frozen |
200 ml | coconut milk |
200 ml | vegetable stock |
Instructions
In a bowl, drizzle the meat with sherry and 2 tablespoons of soy sauce. Marinate for 15 minutes.
In a wok heat the oil. Fry the meat over high heat for 4-5 minutes. Stir in the chilli. Add the peas, tomatoes and the spring onions. Stir-fry for 2-3 minutes. Deglaze with the coconut milk and the stock and bring to a boil. Season to taste with soy sauce and lime juice.
Sprinkle with coriander and serve with rice.
