Asia style chicken casserole recipe details
Ingredients
8 | chicken drumsticks |
3 tbsp | soy sauce |
1 stalk(s) | lemon grass, chopped |
2 small | red chili peppers, chopped |
200 ml | coconut milk |
1 | red bell pepper, diced |
1 bunch(es) | spring onions, sliced |
2 tbsp | oil |
salt and freshly ground black pepper | |
125 ml | dry white wine |
200 ml | chicken stock |
1 pinch(es) | ground coriander |
1 tsp | red or green curry paste |
Instructions
Season the drumsticks with 2 tablespoons of the soy sauce and pepper. In a roasting casserole heat the oil and fry the drumsticks until golden and crispy all around.Preheat the oven to 175°C.
Add to the drumsticks the chilies, curry paste and lemon grass. Pour in the stock, coconut milk and the wine and bring to a boil. Transfer the roasting casserole into the oven and bake for 30 minutes.
Add the bell pepper and spring onions and bake for 10 more minutes. Season to taste the sauce with salt, pepper, soy sauce and cilantro. Serve with rice.
