Ingredients
1 | onion, chopped |
1 clove(s) | garlic, minced |
1 tbsp | oil |
400 ml | vegetable stock |
250 g | red lentils |
300 ml | coconut milk |
1 | lemon, juiced |
curry powder | |
turmeric | |
fresh ginger | |
cinnamon | |
salt and pepper |
Instructions
In a saucepan, heat the oil and sauté the onion and the garlic over medium heat until lucent. Reduce the heat and stir in the curry powder and the turmeric and cook for another minute. Pour in the stock and the coconut milk and bring to a boil. Add the lentils and a piece of ginger. Cover and cook over low heat for 15-20 minutes.Season to taste with lemon juice, cinnamon, salt and pepper.
Serve with fresh bread.
